To do this, make a small cross at the bottom of each tomato, place them in boiling water for about 30 seconds, then transfer them to ice – cold water. The skins will easily peel off.

Step 3: Sautéing the Aromatics

Before adding the rest of the vegetables to the pot, it’s important to sauté the aromatics. Aromatics are ingredients that add a lot of flavor to the soup and include onions, garlic, and sometimes celery.

Heat a large pot or Dutch oven over medium – high heat and add a small amount of olive oil. Once the oil is hot, add the diced onions and cook them until they are translucent, which usually takes about 3 – 5 minutes. Then, add minced garlic and cook for another minute or two until it becomes fragrant. Be careful not to burn the garlic as it can turn bitter.

Step 4: Adding the Vegetables

After sautéing the aromatics, it’s time to add the rest of the vegetables to the pot. Add the carrots, celery, bell peppers, and potatoes to the pot and stir them well to coat them with the oil and the flavors from the aromatics.

Cook the vegetables for a few minutes until they start to soften slightly. This helps to release their flavors and makes them more tender when they are cooked in the soup. You can also add a pinch of salt and pepper at this stage to season the vegetables.

Step 5: Adding Liquid and Seasonings

Step 6: Simmering the Soup

After adding the liquid and seasonings, bring the soup to a boil over high heat. Then, reduce the heat to low and cover the pot. Let the soup simmer for about 20 – 30 minutes, or until the vegetables are tender. Stir the soup occasionally to prevent it from sticking to the bottom of the pot.

If you want a thicker soup, you can mash some of the vegetables with a potato masher or an immersion blender. This will release the starches from the vegetables and thicken the soup.

Step 7: Adjusting the Seasoning

Once the soup is cooked, taste it and adjust the seasoning if necessary. You may need to add more salt, pepper, or herbs depending on your personal taste. You can also add a bit more liquid if the soup is too thick.

Step 8: Serving the Soup

Your fresh vegetable soup is now ready to be served. You can ladle the soup into bowls and garnish it with fresh herbs such as parsley or cilantro. You can also serve the soup with a side of crusty bread or a salad for a complete meal.
